Ingredients:

  • 2 slices of your favourite bread (such as sourdough or gluten free)
  • 1 ripe avocado
  • Fresh MicroGreens (such as pea, radish, broccoli or sunflower MicroGreens)
  • Fresh lemon juice
  • Organic olive oil
  • Celtic sea salt and pepper to taste
  • Optional toppings: Sunflower seeds, pepitas, cherry tomatoes, feta cheese or red pepper flakes

Method:

  • Start by toasting your bread slices to your desired level of crispness.
  • While the bread is toasting, prepare the avocado. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth and creamy.
  • Add a squeeze of fresh lemon juice to the mashed avocado and season with salt and pepper to taste. Mix well to combine.
